Meat, Tradition and Community: The Cut Butchery’s Old School Approach

Located in Hollin Hall Shopping Center, The Cut Butchery is set to become a cornerstone for those who appreciate quality meats, sustainability, and expert craftsmanship. With an anticipated opening on February 14, 2025, this European-style butcher shop aims to blend tradition with innovation, offering a curated selection of meats, pairings, and educational experiences for the local community.

As soon as customers step into The Cut Butchery, they will be welcomed by an enticing selection of cheeses, charcuterie meats, fresh produce, in-house stocks, soups, and broths—a testament to the shop’s zero-waste philosophy. The butchery is deeply committed to working with local docksmen and farmers, ensuring that all beef, lamb, pork, seafood, and chicken are sustainably and locally sourced. Specialty meats such as bison and goat will also be available for purchase.

The meat cases will be the heart of the shop, showcasing expertly cut selections and a dedicated dry-aging section. To complement their meats, The Cut will also stock dry goods like pasta and rice, ideal for pairing with a meal or hosting a gathering.

During its first 100 days, The Cut plans to closely observe customer preferences, to ensure they meet community needs, they will have a suggestion and comment box, encouraging direct feedback.

Beyond retail, The Cut is hoping to host butchery and culinary classes, covering everything from breaking down a chicken to creating the perfect charcuterie board—and perhaps even an unexpected Mahjong night for a bit of fun.

From its inception, The Cut Butchery has been a community-driven effort. Everyone involved in bringing this vision to life is local—from the photographer and logo designer to the muralist, website developer, lawyer, CPA, and social media manager. Even the striking mural adorning the shop is the work of Patrick Kirwin, an artist from the Torpedo Factory, depicting the beauty of country life.

When & Where to Find Them

Situated in a prime location in Hollin Hall Shopping Center (the old Top It Off store), The Cut Butchery will operate from 10am to 7pm, Tuesday through Sunday. Customers will also have the convenience of pre-ordering cuts through the website, making meal planning effortless.
